7 Sweet and Simple Treats
Preheat the oven to 350 degrees Fahrenheit. In a saucepan over low heat, melt 1/3 cup coconut butter. Add 1½ cups coconut flakes, ½ teaspoon vanilla extract, 5 tablespoons of Manuka Honey and a dash of sea salt. Stir until evenly combined. Create small macaroon balls, without packing them too hard, then cook for 10-12 minutes until the outsides have browned slightly.
For a healthy dessert that looks lovely on the dinner table, simply cut a handful of strawberries into quarters and lightly drizzle balsamic vinegar over the top. Add some mint leaves and a spoonful of ricotta cheese and you’re done!
You don’t have to spend hours preparing dessert when you have guests over. Simply stir two cups of ricotta cheese with one tablespoon each of lemon zest and juice, ½ teaspoon vanilla essence and a light sprinkle of sugar. Leave the cheese to absorb the delicious flavors while you enjoy dinner, then serve with a handful of berries when you’re ready.
Ok, so we’re cheating a bit here. But this microwaveable version is too good not to share. Core the apples and cut them into rough chunks. Place them in a microwave-safe bowl and sprinkle brown sugar, nutmeg, cinnamon and raisins on top. Drizzle Manuka Honey over everything and cover with a lid or plastic wrap. Microwave for about 3 minutes, until the apples are soft. Leave to cool for a few minutes, then serve!
These sweet and salty nuts make a nice change to the standard dessert and work nicely at parties alongside a cheese platter. Preheat oven to 350 degrees Fahrenheit. In a large bowl combine 2 cups of whole raw almonds, 2 tablespoons Manuka Honey and 2 tablespoons of sea salt. Fully coat the almonds in the mixture and spread them out on a baking sheet lined with parchment. Bake for 10 minutes, stirring twice during baking to prevent almonds from burning. Remove baking sheet from oven and place almonds back into bowl, adding 2 tablespoons of cocoa powder. Toss to coat and wait until they fully cool, before storing in an air-tight container.
In a food processor, combine ½ cup walnuts walnuts and 1/8 teaspoon salt. Transfer to a shallow dish and set aside. Then combine 12-15 pitted dates, 3 tablespoons cocoa powder, 1 tablespoon apple juice, and 1/4 teaspoon salt. Cover and process until mixture forms a thick paste. If necessary, add one teaspoon of water at a time until you reach the desired consistency.
Using 2 teaspoons of the dough for each truffle, shape into a ball. Roll balls in walnuts to coat. (If dough becomes too sticky, chill for 15 to 20 minutes). Cover and chill for at least 1 hour before serving. Store in an airtight container in the refrigerator for up to 2 weeks.
Frozen yoghurt popsicles
The kids will love these as after-school snacks. Simply scoop Greek yoghurt into popsicle molds and freeze, then drizzle with Manuka Honey before serving.
