Fig, Walnut And Halloumi Salad


Weekdays sure can get busy and, all too often, lunch gets overlooked. Either you’re left with the same old boring meals, picking up takeout, or possibly skipping it all together. That’s why we love this Fig, Walnut, and Halloumi Salad created by Melanie Lionello of @FromMyLittleKitchen.

It’s quick and easy to throw together to pack for lunch or as a side dish for dinner. Hearty enough to fill you up on its own, but light enough to serve alongside a main course. The sweetness of the fig and Manuka Honey pairs so lovely with the saltiness of the halloumi cheese. If you’re a fan of Mediterranean fare, this recipe is sure to become one of your favorites.


  • 4 cups of butter lettuce
  • A handful of walnuts
  • 5 figs
  • 1 packet halloumi, sliced
  • ⅓ cup Comvita UMF 5+ Manuka Honey
  • Generous pinch of sea salt flakes
  • ¼ cup extra virgin olive oil
  • Black pepper to taste


  1. Arrange lettuce, walnuts and figs on a serving plate.
  2. Heat on a non-stick frypan on medium, add oil, Manuka honey and halloumi. Sprinkle with salt.
  3. Fry until golden on each side.
  4. Place halloumi on top of salad with any oil/honey left in the pan as the dressing and serve.
