We love a good recipe that can last more than one meal, and this Honey Nut Granola developed by Elise Blight from @BalanceByElise does just that. With just six simple ingredients, this sweet granola mix will surely go into the weekly rotation.

Eat it with milk, fruit, yogurt, or even as an ice cream topping. We even love it as a snack on its own. It’s totally natural and nutritious but you’ll never feel like you’re eating something healthy for you because it tastes so good. It’s one of our favorite ways to get the health benefits of Manuka Honey in our diet.

 

Honey Nut Granola Recipe Duration:

Prep time: 5 minutes Cook time: 25 minutes Total Time: 30 minutes

 

Ingredients:

Makes 1 tray

  • ⅓ cup Comvita MGO 50+ Multifloral Manuka Honey
  • ¼ cup coconut oil, melted
  • 2 cups mixed nuts, chopped (such as cashews, macadamias and walnuts)
  • 1 cup mixed seeds (such as pepitas, sunflower seeds and flaxseeds)
  • ½ cup coconut flakes
  • ½ tsp ground cinnamon

 

Method:

How to make honey nut granola

  1. Preheat the oven to 325°F.
  2. Add the Manuka Honey and coconut oil to a bowl and combine.
  3. Add in the remaining ingredients and mix well to evenly coat everything.
  4. Line a baking tray with baking paper and pour the mixture onto the tray and spread out evenly.
  5. Place in the oven to bake for 20 minutes.
  6. Remove the tray from the oven to gently stir and move the mixture around before returning to the oven for another 5 minutes. Repeat this one more time and then remove from the oven. Allow to cool completely before moving the granola - this will help make it super chunky.
  7. Break the granola into pieces and place into an airtight container or jar for up to 1 week.
